XBMC plays .iso images normally from any NAS through SMB which is the way your supposed to play them. If your doing it through UPnP then XBMC is a very rare special case, it only works with Synology UPnP server and XBMC nothing else, there's no extraction process it's native support.

No idea, Airplayer isnt DLNA and needs to transcode video to H.264 in order to play on Apple devices which the NAS wont be able to do in the first place.
Using iso disc images on any platform that doesn't natively support them is a bad idea. If you want PS3/iPhone compatibility you will need to convert the videos into H.264/MP4 videos.
